Roasted Beet and Plum Salad with Honey Balsamic Vinaigrette Recipe
I follow Dr. Deanna Minich whose work brings alive the value of colorful foods.
Color is medicine and represents the vibrational energy of a food, bringing you energy, vitality, LIFE force!
Dr. Minich connects energy to the color and the vibration nature of a food. No color is better than another, but of course, intuitively we can be drawn to certain foods at certain times of the month, or because of specific needs within our bodies, minds and spirit.
This Roasted Beet and Plum Salad with Honey Balsamic Vinaigrette recipe is sure to enhance your vibrational energy because of all the many, beautiful, life sustaining colors and phytonutrients from the earth.

Things I learned…
I always learn a few things as I prepare recipes. Here’s a list of stuff I learned.
It’s still difficult to spell vinaigrette correctly
Save small jam jars to store liquids
Use a carrot peeler if you don’t have a julienne peeler
Your fingers will get purple handling beets. It’s more environmentally friendly to wash your hands vigorously with baking soda and water than to use disposable gloves
I love and appreciate my tiny whisk- it’s so great to mix up smaller batches of liquids
I did not know Moozie likes plums!
